Craig earned a Bachelors of Arts degree in 1974 from the University of Connecticut, a DMD degree in 1978 from the University of Pennsylvania School of Dental Medicine, and a PhD degree in 1987 from the University of Connecticut Graduate School, Department of BioStructure and Function. He completed a two-year residency in Family Dentistry in 1980 at the University of Connecticut Health Center and in 1985 received a Certificate in Periodontology from the University of Connecticut School of Dental Medicine Department of Periodontology. He is a Diplomate of the American Board of Periodontology.

From 1985 until 1989, he was appointed Research Assistant Professor in the Department of Biochemistry, University of Pennsylvania School of Dental Medicine. In 1989, he became an Assistant Professor in the Division of Basic Sciences, Department of Oral Medicine and Pathology, NYU College of Dentistry. In 1997, he became an Associate Professor and in 2014 a Professor in the Department of Basic Sciences NYU College of Dentistry. He maintains a private practice limited to Periodontics and Implant Dentistry at the NYU Dental Faculty Practice, 418 Lafayette Street, Suite 350, New York, New York.

His research interests include periodontal regeneration, systemic effects of periodontal diseases and practice-based research networks. His research has received funding from the National Institutes of Health, private foundations and industry.
